FRENCH BREADS & ITALIAN BREADS

Using only flour, water, salt and dried yeast, achieving authentic French breads with distinct rustic crusts and light creamy interiors is the ultimate test of a baker's skill. 

​Inspired by their French neighbours, Italian incorporated olive oil and/or other aromatic ingredients to the French bread dough, giving the products additional complexity on top of the delicious fragrance of bread

At Levain, we use French flour and also Poolish, a yeasted pre-ferment, in the production of our French breads. This increases the extensibility of the bread dough for increased loaf volume in addition to more complex flavours.

Our French breads have: 
  • No preservatives/stabilisers 
  • No bread improvers
  • No additional sugar
  • No enhancers/flavourings
  • No acids/sour powder
  • No corn meal
  • No eggs
  • No added oils/fats/shortening
  • No dairy 
All Italian breads have: 
  • No preservatives/stabilisers
  • No bread improvers
  • No additional sugar
  • No enhancers/flavourings
  • No acids/sour powder
  • No corn meal
  • No eggs
  • No dairy (unless there's cheese)
  • No shortening added
